WAKE ME UP PAPAYA with freeze-dried papaya

INGRIDIENTS
  • 8 slices of freeze-dried papaya

  • 30 ml of white rum

  • freshly squeezed orange or two smaller ones

  • 15 ml of peach liqueur

  • 10 ml of simple syrup

  • 60 ml tonic from Schwepps

  • 3/4 serving glass of ice

PREPARATION INSTRUCTIONS

Soak the papaya in half the squeezed juice of an orange. Or in the juice of a whole small orange. Wait for the papaya to rehydrate. This takes a few minutes. Grind everything with a stick blender. You will get a wonderful orange-flavored papaya puree.

Add mashed papaya, white rum, remaining orange juice, peach liqueur, simple syrup and ice to a cocktail shaker.

Shake for up to 20 seconds. Strain and pour into a glass filled with fresh ice.

ADVICE

SIMPLE SYRUP

Simple syrup you prepare it by boiling 100 ml of water with 100 g of sugar over low heat, stirring until the sugar dissolves. Let it cool down. Store in the refrigerator.
