HOMEMADE FRUIT GRANOLA with freeze-dried fruit

Are you looking for a cheaper and healthier version of granola? If you agree, it is best to prepare it yourself at home. You choose the ingredients that suit your taste and preferences. The preparation is extremely simple and is enough for several meals. You can enjoy it with milk, yogurt, kefir, almond, rice, oat, coconut drink/milk,... In other words, imagination has no limits when it comes to creation. Freeze-dried fruit provides freshness and vitamins, i.e., a perfect start to the day.

INGRIDIENTS

60 g of freeze-dried fruit (raspberry, apple, fig, strawberry,...)

500 g of oats (oatmeal, spelt, rye, corn,...)

150 g of chopped nuts of your choice (almonds, cashews, hazelnuts, walnuts,...)

¾ teaspoon of salt

½ teaspoon of cinnamon

100 g of melted coconut oil

130 g of honey

1 teaspoon of vanilla extract

60 g of coconut chips

PREPARATION INSTRUCTIONS

Heat the oven to 170 degrees, line a large baking tray with baking paper.

In a large bowl, mix the flakes, chopped nuts, salt and cinnamon. Pour in the melted coconut oil, honey and vanilla extract and mix everything well to get a sticky mixture.

Transfer the mixture to a previously prepared baking sheet and spread it in an even layer on the paper.

Bake until the flakes are golden brown, about 20 to 25 minutes. If you want smaller granola, mix it well 1 to 2 times during baking, if you like bigger pieces, don't mix them.

Remove from the oven and let cool for at least 45 minutes. Mix freeze-dried fruit and coconut pieces. If larger pieces of granola remain, you can break them up with your hands. Store granola in an airtight container at room temperature.
