BLUEBERRY MOJITO with freeze-dried blueberries

INGRIDIENTS
  • 8 freeze-dried blueberries (and 8 for garnish)

  • 2 teaspoons of freshly squeezed lime or lemon juice

  • 2 teaspoons of sugar,

  • 8 fresh mint leaves (and 5 for decoration)

  • 60 ml of white rum

  • 4 slices of lemons or limes

  • 60 ml soda (you can also use mineral water)

  • Lemon slices for serving

  • ice

PREPARATION INSTRUCTIONS
  1. Put blueberries, lime juice, sugar and mint leaves in a cocktail shaker, mash. Blueberries will rehydrate on contact with liquid and release their beautiful color. The wonderful fresh smell of mint will also be released while mixing.

  2. Once the sugar has melted and the blueberries have broken down, add the rum, ice, lemon and mint, or a few whole blueberries. Shake it up.

  3. Pour the liquid into a glass and add soda.

  4. Garnish with lemon, blueberry and mint.

ADVICE

You can also make a mojito in the glass itself, without a cocktail shaker. Just make sure that you find a glass that is sturdy enough so that it doesn't crack under pressure.
