PANCAKES with freeze-dried blueberry

Easy and quick to prepare. An excellent breakfast for the weekend when we want to surprise our loved ones. The wonderful smell that spreads throughout the house will wake up even the biggest sleepers. Gently fluffy with a hint of crispness, which the pancakes get thanks to freeze-dried blueberries.

INGRIDIENTS
  • fist freeze-dried blueberries

  • 200 g white plain flour T400

  • 1/2 tablespoon of baking powder

  • 2 tablespoons of sugar

  • 150 g of sour cream

  • 150 ml of milk

  • 25 g butter at room temperature

  • pinch of salt

  • floral or acacia honey for topping

PREPARATION INSTRUCTIONS

Separate the yolks and whites. Whip the egg whites into hard snow. Mix milk, sour cream, egg yolks, sugar and butter in a large bowl. Add flour, baking powder and salt. Mix again to combine the ingredients. Then gently mix in the whipped snow and finally the freeze-dried blueberries.

Heat the pan. When it is hot enough, add a small ladleful of the mixture. The diameter of the pancake should be about 8 cm. Bake for 3 minutes or when air bubbles begin to form on the surface. Then turn and bake for another 1 to 2 minutes until golden.

When serving drizzle with honey. You can also use lemon, chocolate, jam,... It depends on the taste.
